Selva

Selva is the intimate end of Colectivo Carmelo's Córdoba 104 building: a natural wine bar and vinyl listening room that fits a small crowd and treats both the bottle list and the record shelf as the program. The wine leans toward low-intervention producers, Mexican and European, and the staff pour with genuine enthusiasm — tell them what you usually drink and let them take you somewhere adjacent.

The listening-room element is not decoration. Records get played end to end at a volume that still allows conversation, which sets the room's whole tempo: slower, warmer, and more social than a standard wine bar. It suits couples, small groups of two or three, and anybody who would rather talk than shout.

Its position in the building is a gift. Start with something to eat at Perezoso, spend the middle of the evening at Selva with a bottle, and finish downstairs at Cometa when the floor opens up. Come early for a seat at the bar, ask what just arrived from Baja or Querétaro, and plan on staying longer than you intended.
