María is Colectivo Carmelo's gastro-cantina on Valladolid in Roma Norte, and it is the most detail-obsessed room in the group. The concept is nocturnal Mexican botany: a bar program built around native plants, herbs, and agave spirits, translated into cocktails that are aromatic and precise rather than sweet. Order at the bar and watch the build — infusions, tinctures, and house preparations do the heavy lifting.

The food is designed to keep pace with the drinks instead of competing with them: sharing plates rooted in Mexican cantina tradition, updated with a lighter hand. The room itself is dim, plant-heavy, and intimate, and it fills with a crowd that leans local and knows what it ordered. Ask the bartender for a recommendation based on a spirit rather than a flavor and you will get something you cannot order anywhere else.
