Locals will tell you Pujol is for tourists, and to some extent, they’re right – those of us living here don’t go weekly. But that doesn’t mean it’s not an extraordinary restaurant. A local might save it for a very special occasion or take out-of-town guests to show off. We also know that Olvera's influence is everywhere, so even if we’re at a more casual spot, we’re still tasting elements he pioneered.
